Uma cozinha brasileira?
Contribuições da perspectiva antropológica para o fortalecimento do turismo gastronômico

The article presents a discussion involving the relationship between national identity and Brazilian cuisine, aiming to deconstruct the notion that Brazilian gastronomy can be defined from a hegemonic identity. In this proposal, the notion of Brazilian cuisine is defended, in which the plural applied to the term cuisine encompasses the diversity of knowledge, ways of doing and particular knowledge that configure identities of different cultural groups and express a wide culinary system. The above argumentation process was based on the theoretical framework of Anthropology, using the historical method applied to the analysis of bibliographic sources here interpreted as construction of a narrative whose symbolic aspects will be refuted in favor of demonstrating that for the purpose of valuing Gastronomic Tourism, the notion of Brazilian cuisine offers greater potential for product diversification within this segment of tourist activity.
